Vinegar is a product of fermentation.  This is a process in which sugars in a food are broken down by
bacteria and yeast.  In the first stage of fermentation the sugars are turned into alcohol.  Then, if the
alcohol ferments further, you get vinegar.  The word comes from the French, meaning "sour wine."

While vinegar can be made from all sorts of things -- like many fruits, vegetables, and grains -- apple
cider vinegar comes from pulverized apples.

with the "mother" of vinegar present, as a natural product.  It can be diluted (e.g. with fruit juice,
honey, or sugar) before drinking.[2] Others dilute it with warm water and add some honey.

Apple cider vinegar is also an old folk remedy used to clear ailments such as gout, poor complexion
and acne, arthritis, candida, high cholesterol and other ailments.  

Unpasteurized apple cider vinegar and organic may have a cob web, congealed appearance. This is
natural, formed during the last stage of the fermentation process. This substance is often called
"mother of vinegar" which is actually bacteria and yeast cells that have died.  Simply strain.

Apple cider vinegar is made by crushing apples and squeezing out the liquid. Sugar and yeast are
added to the liquid to start the fermentation process, which turns the sugars into alcohol. In a second
fermentation process, the alcohol is converted by acetic acid-forming bacteria into vinegar. Acetic
acid gives vinegar its sour taste. [6]

The only apple cider vinegar I use is Bragg organic and comes from health food stores.  Many
commercial apple cider vinegars have been pasteurized, filtered, refined or distilled in order to make
the product look good, and thereby more appealing to the general public.  Unfortunately this extra
processing destroys much of the healthy goodness and thus many of the apple cider benefits that
were in the product in the first place.
